Wageningen University & Research: Sustainable Protein From Tomato Leaves, Fungi, And Insects



Researchers from WUR are looking into ways to produce the proteins we need in a more sustainable, circular pattern. Bruins are also examining whether the method works on other plants, too. “We’ve observed that yields can vary among different plant species and types. Scholtmeijer and her colleagues conducted research on this in conjunction with colleagues from the Social Science group. “We found that people are certainly prepared to eat it, but preferably as a ‘clean label’ food, meaning as unprocessed as possible,” she states. “But if we tell them more about the sustainability aspects, they’re willing to try it in other forms, such as a powder.”


The following research phase will involve selecting the best fungi in the study for further research and determining their exact composition. “We want to see if we can use breeding techniques to produce better varieties with a higher protein content,” Scholtmeijer explains. Scholtmeijer. “Mushrooms aren’t the as excellent a source of protein as some people think, since the measure of the protein in them is determined by their dry weight, and mushrooms/fungi have high water content. The yields can fluctuate by the hour, for example. “At present, insect production is focused on producing larvae and rearing those larvae,” Ellen says. Ellen. “The rearing process is stimulated by optimizing their diet. However, no one is studying the differences between species or determining the most efficient species.”

Breeding systems may be a significant factor in the expansion levels of the insect’s protein. Ellen is currently working on producing programs and investigating whether genetic selection can increase protein production in insects. “We’re looking not just at larvae growth, but also at how efficiently larvae use their food and health and welfare.”

Now is the time to establish a good practice from the beginning and gain knowledge from breeding experiences traditionally-bred livestock.”

Due to the new EU rules, insect proteins can now be utilized in animal feed for chickens and pigs. A few insect products have been allowed to be consumed by humans. There are some limitations, but.
